You’ll then explore a 15th-century cellar, restored to preserve its ancient stone vats and now used for aging sparkling wines with the traditional method. In the aging room, large oak casks hold wines crafted from local varieties, including the recently rediscovered Cesanese of Castelfranco—an indigenous grape with notes of wild berries, cocoa, and black pepper. The experience ends with a guided tasting of four wines paired with house-made cured meats. Along the way, you’ll learn about the land, traditions, and people dedicated to sustainable farming and preserving this region’s heritage.
