Nestled just outside the charming town of Prnjavor in northern Bosnia and Herzegovina, Winery Fazan is a hidden gem founded by Christian Zwickert, a French oenologist from Alsace, and Dr. Oksana Sadzik, a Bosnian‑Ukrainian devoted to the land. Fazan Winery is as much about story and soul as it is about exceptional wine.
The vineyards rest on southern hillsides at 180‑240 meters altitude, with gentle slopes of 15‑20%, offering excellent soil drainage. The continental climate—cold winters, warm dry summers, and mild sunny autumns—allows late-ripening varietals like Cabernet Sauvignon and Syrah to develop full character. Grapes are harvested manually in the morning to ensure freshness and carefully sorted in ventilated 15‑kg crates. Whites ferment in stainless steel tanks (Riesling) or wooden barrels (Chardonnay), with extended lees contact for depth.
